Up! Up! Up!

I’m all for eating peaches in their natural, raw state (familiar with the over the sink method?), but I saw this recipe for a Rustic Peach Cake at Tracey’s Culinary Adventures and felt it needed to be made.

*I substituted the dried fruit with pistachios for color and a less jaw-aching amount sweetness. You know, to justify putting ice cream on top.
